Mississippi Mud Cheesecake

This mud cheesecake recipe makes enough for about twelve servings but you can always double the ingredients if you are making this for a party. This recipe takes about forty minutes to prepare and is ready to enjoy in about ten hours because the cheesecake has to bake and cool.  We know this is a really long time to wait but once you try the first bite, you will forget about how long it took to make.

Ingredients :

1 1/2 cups finely crushed animal cracker cookies

1 tablespoon instant coffee granules

1/4 cup butter

2 cups sugar

1/3 cup unsweetened cocoa powder

2 teaspoons instant coffee granules

3 tablespoons cornstarch

3 (8 ounce) packages cream cheese

4 eggs

1 teaspoon vanilla

1 cup chopped pecans

1/2 cup semisweet chocolate chips

2 tablespoons milk

1/2 cup marshmallow creme

Directions :

1. Preheat oven to 350 degrees F.

2. Grease 9-inch pan.

3. Mix animal cracker crumbs, 3/4 cup sugar and 1 tablespoon instant coffee granules.

4. Combine 1 1/2 cups sugar, the cocoa powder, 2 teaspoons instant coffee and the cornstarch.

5. Add cream cheese.

6. Beat in the eggs, adding the vanilla extract.

7. Fold in 1/2 cup chopped pecans.

8. Bake for 15 minutes; reduce heat to 200 degrees F and continue baking 2 hours.

9. Melt the chocolate chips and milk.

10. Spread the marshmallow cream.

11. Drizzle the chocolate over the marshmallow cream and sprinkle chopped pecans overtop.
