King Ranch Chicken Casserole
Serves 8
Ingredients :
1/4 cup butter
1 medium onion, chopped
1 medium red bell pepper, cored, seeded and chopped
1 can (10 3/4 oz.) condensed cream of mushroom soup (low fat is fine)
1 can (10 3/4 oz.) condensed cream of chicken soup (low fat is fine)
1 can (10 oz.) Ro-Tel Diced Tomatoes & Green Chilies
2 cups cooked chicken breast, shredded
8 -12 corn or wheat tortillas (6-inch), torn into bite-sized pieces
2 cups shredded cheddar cheese (or whatever cheese you have on hand, except a blue cheese)
Directions :
1. Preheat oven to 325 degrees F.
2. Coat a 13 x 9 x 2-inch baking dish with nonstick cooking spray and set aside.
3. In a large saucepan over medium heat, melt the butter.
4. Add onion and pepper, and cook until tender, about 5 minutes. Add soups, RO*TEL and chicken, stirring until well blended.
5. Alternately layer tortillas, soup mixture and cheese, repeating for three layers.
6. Bake until hot and bubbly, about 30 minutes.
