Old Fashioned Potato Candy

Ingredients :

1/2 C. plain mashed potatoe, room temp. (just boil the potato and mash it)
1/2 tsp. vanilla extract
5-6 C. powdered sugar
creamy or chunky peanut butter

Directions :

1- Place the potatoes in a bowl and add in the vanilla.
2- Stir in the powdered sugar, 1 cup at a time till you get the consistency of a batter thicker than cookie dough.
3- Tear off big sheets of parchment or wax paper and place on the counter, dusting well with more powdered sugar.
4- Turn the dough out onto the paper and pat it together.
5- With a little more powdered sugar sprinkled on top, roll it out in a rectangle to 1/4" thickness.
6- Spread an even layer of the peanut butter over the entire surface.
7- Roll it up and wrap it in the paper you rolled it out on.
8- Place in the fridge for 30 minutes to set up.
9- Thinly slice it and place on a serving plate. This will keep up to 1 week in the fridge. Approx. 24 pieces.
