Grits Breakfast Bake
I try to cook breakfast for my husband's bank every week or two. This is their favorite!
Cook time: 50 Min Prep time: 20 Min Serves: 6-8
Ingredients :
2 1/2 c water
3/4 c quick grits
1 lb eckridge skinless smoked sausage
1 1/2 c cheddar cheese, shredded (sharp)
6 eggs beaten
1 1/2 tsp salt
1/2 tsp pepper
1-2 sliced tomatoes
2 Tbsp chopped parsley
1 tsp dry mustard
1 can(s) evaporated milk 12 oz
Directions :
1- Heat oven to 325. Grease a 9X13 dish. Bring water to a boil; add 1 tsp salt slowly stir in grits. Reduce heat and simmer 4-5 minutes until thickened stirring frequently.
2- Stir in chopped smoked sausage and half of sharp cheese. Spoon into dish and sprinkle with remaining cheese. Combine eggs, milk and spices. Pour over grits mixture and bake for 50 minutes or until knife inserted 1 1/2 inches from side comes out clean. Let stand 10-15 minutes. Garnish with tomato and parsley.
