Crock Pot Meatloaf

Ingredients :

1 large egg
1/2 C. milk
3 slices bread, finely torn

Direction :

Whisk together the egg and milk, add the torn bread and let sit for 5 minutes. Meanwhile combine the following:

Ingredients :

1 1/2 lb. ground beef
1 C. finely chopped onion
2 T. worcestershire sauce
1/4 C. ketchup
1 T. my house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)
1/2 tsp. smoked paprika
12 saltine crackers, crumbled

Direction :



Once well combined, add the egg mixture and mix well. Line your crock pot with 2 pieces of heavy duty foil, enough up the sides to be able to lift out the meatloaf once done. Place the meatloaf mixture on the foil and pat into a loaf. Cover and cook on high for 3 hours. Meanwhile, make the topping:

Ingredients :

1/4 C. ketchup
1 T. dijon mustard
1 T. honey

Direction :

Combine and spoon over the meatloaf after 3 hours of cooking, cover and continue to cook for 1 more hour. Lift out of the crock pot and serve.
