Pumpkin Pie Chia Pudding
Ingredients :
2 cups canned coconut milk
1 cup pumpkin puree
1/4 cup coconut sugar
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/4 teaspoon allspice
1/2 cup of chia seeds
4 tablespoons whipped topping, optional
Directions :
1- In a blender add all ingredients except chia seeds, pulse until smooth. Add chia seeds and pulse just until combined.
2- Divide the mixture between four 8-ounce mason jars or dessert dishes, cover and refrigerate overnight.
3- If desired, top with whipped topping before serving.
